Banana Oat & Blueberry Pancake Recipe

Ingredients

1 ripe banana

½ cup oats (old fashioned or instant)

½ cup oat milk (or any plant milk)

1/2 teaspoon baking powder

dash of cinnamon 

1 cup wild blueberries

Method

STEP 1
 
Add all ingredients to a blender and blend until smooth.
 
STEP 2

Warm coconut oil in a pan on a medium heat.
 
STEP 3
 
Pour batter into pan from blender into small circles. Cook for about 2 minutes until bottom is lightly browned.Toss over and cook the other side until slightly browned on both sides
 
AND ENJOY!
 
Serve up with maple syrup, almond or peanut butter for extra sweetness.
